5 Speedy Recipes For Your Work Lunch

Make yourself a lunch to look forward to! In the hustle and bustle of the working week the thought of food-prep can be daunting. But worry no more, we’ve got you covered!

Here are 5 speedy recipes that pack a punch and set you up for a productive afternoon at work...


1) Mango, Mozzarella and Chicken Salad

We all know we should try to be healthy. But a salad consisting of lettuce, cucumber and tomato simply won’t fill you up or provide you with the energy for the rest of the workday. It is important to incorporate a small portion of carbohydrates or protein into your salad in order to bulk up the leafy greens.

Grill a chicken breast for a few minutes per side, chop fresh mango into slices and tear mozzarella into rustic chunks. In the morning, drizzle with balsamic glaze and look forward to eating it, all the way up until lunch.


2) Baked Salmon, Avocado & Chilli Pasta

Avocados are bang on trend right now and rightly so! Not only are they a versatile product and ingredient, but they’re great for your health. They contain high levels of fibre and more potassium than bananas!

A boring tomato pasta can be spruced up with the help of flaky salmon, creamy avocado and a hint of chilli. The carbohydrates in the pasta will release slow energy throughout the afternoon (use whole grain pasta for an even healthier alternative).

The pasta and salmon can be cooked, cooled and stored in the fridge overnight. This means when you are still groggy in the morning, all you have to do is; scoop a portion of pasta, add flaked salmon and avocado chunks then sprinkle with chilli.

Minimum prep for maximum flavour!

3) Chicken & Bacon Club Wrap

This classic combo, paired with crunchy lettuce and mayo and tucked in a tortilla wrap, is too good not to try. Place bacon in a pan and fry until crisp. Whilst your bacon sizzles, line the tortilla with mayonnaise (stir in paprika for a little kick) and tomato chunks. Once cooked, chop the bacon into small pieces and mix amongst pre-cooked/leftover chicken pieces. Season with salt and pepper then pile on top of the garnishes.  Roll, wrap in foil and you’re all set.


4) The Left-overs Lunch

Don’t throw away uneaten meat from your Sunday dinner. Your pork, chicken, beef or lamb can be recycled to make delicious and hearty sandwiches.

TOP TIP! For ultimate tenderness, soak the meat in gravy and leave in the fridge overnight. Top roll combos include: pork with apple sauce, beef and mustard, and chicken with stuffing.Mmm... Mondays aren’t so bad after all.


5) Chinese Noodle Soup

Don’t shy away from soups. They don’t take as long to prep as you think and, once a batch is made, it can be refrigerated or frozen for weeks to come!

This Chinese style soup and its spices will warm you up as we say goodbye to the British Summer and head into Autumn. The soup contains skinny vermicelli noodles, mushrooms, ginger and garlic, along with eastern flavours. Simply combine all of the ingredients (except the noodles) into a large pot and cook for 10 minutes. Then add the vermicelli and boil in veggie stock until soft.
